Serving the bakery needs of a Wauwatosa neighborhood for over three decades creates a positive image.

Due to this stellar stature, Simma’s Bakery, 817 N. 68th St., was named the 2017 Bakery Operation of the Year by the Wisconsin Bakers Association.

“We hope to continue to build on the reputation that Simma’s has developed over the last 32 years," said Simma's owners Mark and Peggy Carollo. "Our recent expansion hopefully shows the community our commitment to continue to serve Wauwatosa and the surrounding areas.”

Simma's doubled in size in January 2016 when the Carollos purchased the building they are located in, knocked down a wall and closed a frame shop.

The Bakery Operation of the Year award was created in 2001 to annually recognize an outstanding bakery operation. It was presented to the Carollos March 13 during the WBA’s Awards & Appetizers Networking Evening in Milwaukee.

The Carollos purchased Simma’s Bakery in 2011 and have run it as a family business since then, employing their daughters. The Carollos also own Croissant Etc., a wholesale bakery located in Greendale that supplies fully baked and frozen dough croissants to food service and the retail marketplace throughout the upper Midwest.

The bakery was founded by Simma Yundov, who opened the bakery in the early 1980s. According to the bakery’s website, their signature item is the classic cheesecake, but they are also known for wedding cakes, pastries, conventional cakes and morning buns.

Six Wisconsin bakeries were nominated for the 2017 Bakery Operation of the Year and past recipients of the award voted to determine this year’s winner.
