Restaurant development company Hospitality Democracy plans to open three new restaurants in the Mayfair Collection in time for the holiday shopping season.
The soon-to-open eateries include AJ Bombers, Smoke Shack and Holey Moley Coffee + Doughnuts. The Mayfair Collection is on West Burleigh Street close to Highway 41/45 and has seen extensive growth over the past few years.
“We could not be more pleased to join in the retail excitement that is happening in Wauwatosa,” said Joe Sorge, owner of Hospitality Democracy. “We feel our restaurants are the perfect addition to the current offerings at The Mayfair Collection. Our new locations are perfectly placed, just in front of the new Hilton Homewood Suites hotel and incorporate an attached parking garage for up to 100 vehicles.”
The restaurants will be housed in a single 6,280-square-foot building at the site. Three other restaurants — a new pub/tavern, a taco restaurant and a French bistro — owned by Phoenix Development Partners but operated by Bartolotta Restaurants opened earlier this summer.
Smoke Shack, which has a location in Milwaukee’s Historic Third Ward, serves smoked meats and features unique barbecue sauces and cocktails. It will have an outdoor patio, a bar area incorporating reclaimed barn wood and a “rustic” buildout similar to its existing location.
AJ Bombers, which has existing locations in downtown Milwaukee, Miller Park, the Summerfest grounds and in Madison, will have the same theme as its other restaurants of mainly burgers and beer. Holey Moley, which has a location in the Third Ward, will serve coffee, doughnuts and custard-doughnut sandwiches.
Hospitality Democracy also operates Onesto, Swig and Water Buffalo in the Third Ward, and has rights to Zaffiro’s Pizzeria & Bar on the east side.
