Tosa curling is always at its finest when food is involved. Yesterday was the Third Annual Chili Spiel and competition cook-off.
Eight homemade chilies were entered in the the event - including my variation on a turkey chili.
Even though it didn't win first place it's a mighty fine winter dish.
Gas Pains' Turkey Chili
2 - garden sweet onions chopped
3T - chopped garlic
2 - 20 oz packages of turkey breast chopped into pieces about the size of your big toenail
4 - 4 oz cans of Victoria fire roasted chopped mild green chilies
2T - ground cumin
1T - chili powder
1 1/2T - dried oregano
Ground cayenne and white pepper to taste
4 - 15 oz cans of beans - rinsed and drained. (I used a baby butter, pinto and a couple of white beans - personal preference is the rule)
2 - 32 oz cartons of organic chicken stock
3C - shredded Monterey Jack cheese
In a stock pot on very high heat sear the onions, garlic, turkey in olive oil. Toss-in the cumin and chili powder. Keep the heat cranked so that the juices cook-off and the turkey and onions thicken and brown. Reduce heat and add the oregano. Stir.
Add the green chilies and one box of chicken stock. Stir.
Add all the beans - except one can of the white beans. Smash or otherwise puree the last can of white beans and add that to the pot along with the second box of chicken stock.
Simmer on low and adjust the "burn" of the chili with cayenne and white pepper.
Serve with shredded cheese, crackers or crushed tortilla chips, icy cervezas and friends.
You can make this ahead of time to be warmed-up in a slow cooker if you are entertaining. If you take any leftovers to the day job be prepared for moochers to come schmoozing around.
